Our journey began in the vibrant flavors of Delhi, where my father developed a deep love for the city’s culinary treasures from creamy Dal Makhani to spicy Chhole-Bhature.
However, when health concerns forced him to reconsider his beloved restaurant food, he faced the heartbreaking prospect of giving up those cherished flavors.
Enter my remarkable mother, the unsung hero of our culinary journey. Determined to create healthier versions of my father’s favorites, she spent countless hours cooking and experimenting with various spice mixes available in the market. Yet, every attempt brought inconsistency adjustments in spices ‘SWAADANUSAR’ often led to unpredictable results, turning sometimes a 30-minute recipe into a 90-minute ordeal.
Seeing her struggle, my father stepped in. He began mastering the art of spice roasting and blending, creating mixes that captured complete flavor profiles with simple and efficient cooking methods. Now, Mom just adds a packet to her dish, and it turns out perfectly in no time it’s as effortless as cooking a 2-minute noodle. Together, they transformed their kitchen into a space of efficiency and joy. As their son, I delighted in their delicious experiments and felt inspired to share these techniques with others.
